Friday night was going good. We were all ready for the big snow storm to hit. Hubby & I were watching tv in bed, the little ones were sleeping & the big boys were doing their thing in the family room. Then I felt it. A contraction. But that’s not a big deal. I’m 27 weeks and braxton hicks are to be expected. But then exactly 4 minutes later I felt another. This went on for almost 45 minutes. I was getting nervous. So I called my OB and he said to get to L&D right away. What a night for this to happen!!! So off we go on our 30 minute drive to the hospital. I get in and they hook me up. The contractions had tapered off. They did a sonogram as well as an internal exam. I wasn’t dilated and my cervix was still long. I was contracting some but not as regular as before. The OB gave me a dose of brethine and sent me home. Of course we were driving home as the snow was starting. I’ve had a few contractions today but nothing regular. So now I have been ordered to limited bed rest….how fun!!!
My Baby Is Growing Up!!! February 5, 2010
Last night Little Guy spent his first night in his big boy bed. It went good until about 4am when he fell out. I know he should have bed rails. But the bed is the bottom bunk of a metal frame bed and traditional bed rails will not work. So after picking him back up and tucking him in he went right back to sleep….NOT
He thought it was wake up time! So I told him it was night-night time and to go back to sleep. After a little fussing he quieted down and was back to sleep.
Quick update on the potty training: I’d say Little Guy is about 90% trained. He is not dry through the night yet and he seems to have an accident between 4-6 pm. I will take the blame for that tho. It is such a crazy time here. I am running out to pick up my oldest from wrestling and then I come home and get dinner started. After dinner is done I clean up the kitchen and put the food away. By the time I remember it’s been a while since Little Guy has gone potty he is wet
Potty Training Has Begun!! January 25, 2010
Yes it is that time. I have started the process with Little Guy. It had been on my mind for quite some time but I just kept putting it off. Then over the weekend I found my stash of cotton training pants. I didn’t get started until later in the day yesterday. He stayed dry for a long time. Every time I asked if he had to go potty he said “No thank you”
Then later he comes to me walking a bit funny and says “Mom I got poop in there” (he says poop even when it’s not poop) So I put on another pair of undies. Bed time rolls around and before I put his diaper on for the night I ask him if he has to go potty again. We go in the bathroom and get the step stool all set up. We watch and wait. And ta-da he goes potty
Now it was only one time and I know it will be a while…..but we have started the process to becoming diaper free
Another Cabinet Meal January 23, 2010
We tried out a new recipe using all ingredients I already had on hand. With the exception of 2 1/2 kids (Busy Bee at most of it) it was a huge hit!!!
Taco Casserole
1 1/2 Lb. ground beef
1 envelope taco seasoning mix
1 can pinto beans or kidney beans (I used pinto – it was the first can I grabbed)
1 8 oz. can tomato sauce
I cup coarsely crumbled tortilla chips or corn chips (I used corn chips as we had it on hand)
1/2 cup of shredded cheddar cheese
Cook ground beef & drain. Add taco seasoning mix, beans and sauce & mix. Leave over med-high heat until mixture comes to a boil. Pour into a 2 quart casserole dish. Sprinkle chips and cheese over top. Bake @ 375 degrees for 20 minutes or until cheese is melted. Serves 4-6.
There was not one bite left. Next time I will double this recipe

I was inspired by a post from Homesteader’s Heart about cleaning out her pantry. Although I did not find expired food like Kim did, I did find that I had multiples of items. Some of which I had no idea that I had!! I found 3 jars of peanut butter, 6 cans of pinto beans (why I have no idea as we do not eat beans!!) 10 bags of white rice and about 8 cans of tuna (just to name a few of the goodies I found)! After reading a great entry from The Happy House Wife I was inspired to see what meals I could come up with by using the ingredients I had on hand! So for dinner tonight we are having Hamburger Pie. I’ve made this many times but it has been out of rotation for a while. This easy one dish meal can be made with all the ingredients I already have on hand!
Here is the recipe:
1/2 Lb ground beef
3/4 cup cold water
1/4 cup butter (no substitutes!)
3/4 cup flour
3 eggs
1 cup white rice (cooked as instructed on package)
mozzarella cheese, spaghetti sauce & seasons to taste (I use garlic & onion powder)
Brown the ground beef. Drain & add seasons. Cook rice. In a medium sauce pan bring butter & water to a boil. Add flour all at once and stir until mix forms a ball. Remove from heat. Add eggs one at a time mixing well. Spread dough on bottom & sides of greased 10 ” round pan or deep dish pie plate. Fill with ground beef, sauce & rice. Spread mozz. cheese on top and bake 25 minutes or until browned @ 425 degrees.
